Veggy Burgers

Delicious veggy burgers that went down very well at our vegetarian barbecue at the weekend. They would cook equally well in either the oven or in a frying pan. Delicious with my chilli jam or even my satay sauce.

Ingredients:

  • 750g grated carrot
  • 1 tin of chickpeas
  • 1 onion chopped
  • 2 tbsp tahini paste
  • 1 tsp ground cumin
  • 1 egg
  • 1 tbsp olive oil
  • 100g breadcrumbs
  • zest of 1 lemon
  • 3 tbsp sesame seeds

Directions:

  1. Food process 250g of the grated carrot, the chickpease, onion, tahini, cumin and egg then place the mixture in a large bowl.  Put olive oil in a frying pan and gently fry the carrot until it is softened (about 10 minutes) then add this to the mixture in the bowl. Also add the breadcrumbs, lemon zest and sesame seeds and black pepper. Mix well, divide into 10 balls, flatten into burgers and chill for 2 hours before cooking. Cook on a barbecue as you would a normal burger but be aware that they need careful handling to ensure they do not break up on the grill.
