Tonight’s Menu – A Mexican Meal
- 16 g Enchilada Spice Mix
- Enchilada Tomato sauce
- 500g beef mince
- 1 finely chopped onion
- 1 finely chopped red pepper
- 8 Tortilla wraps
- 150g cheddar cheese grated
- plus guacamole and sour cream and refried beans and nachos (optional)
Fry the beef and onion and pepper for 5 minutes, then sprinkle in the enchilada seasoning, cook for a minute then add half of the enchilada sauce and 150ml of hot water, bring to the boil and simmer for 15 minutes then take each tortilla and place some filling in each, roll and place in a greased dish. When you have filled all the tortillas, pour the remaining enchilada sauce over the top and sprinkle with the grated cheese.
Cook at 200C for 20 minutes and then enjoy with your homemade salsa, guacamole and sour cream etc. Plus nachos are good.
