Simple to cook and just as delicious, if not more so, than any Chinese takeaway.

  • 225g chicken breast cut into thin strips
  • 1 onion sliced
  • 1 pepper sliced
  • 225g pineapple pieces
  • 1 carrot thinly sliced
  • 25g bamboo shoots, halved
  • 125g brown sugar
  • 2tbsp cornflour
  • 125ml white wine vinegar
  • 2 crushed garlic cloves
  • 4tbsp tomato puree
  • 6tbsp pineapple juice
  • oil, salt and pepper


  1. heat some oil in a wok or large frying pan and stir fry the chicken pieces until nearly cooked, remove from the pan
  2. add the onion, carrot and pepper to the pan and cook over a medium heat until just starting to soften, add the pineapple and bamboo shoots and stir fry for 2 minutes, remove from the wok and place in a dish
  3. mix the sugar, cornflour, white wine vinegar, garlic, tomato puree and pineapple juice and add to the wok, bring to the boil and stir until the sauce is thickened and clear
  4. return the chicken and veg to the wok and cook for a further 2 minutes, check the seasoning
  5. serve with fried rice.
