Perfect with enchiladas and great in wraps with ham and cheese for lunch. Or mix with couscous and some tuna or chicken for a great healthy lunch.

  • 8 large on the vine tomatoes chopped
  • 1/2 small white onion finely chopped
  • juice of 1 lime
  • 1 tsp ground coriander or a handful of fresh coriander chopped
  • 1/2 red chilli chopped finely (no seeds)
  • pinch of salt


  1. Mix all the ingredients together and add salt to taste.
