  • a good handful of raw meat offcuts
  • 2 tbsp olive oil and a knob of butter
  • 1 onion finely chopped
  • 2 sticks of celery finely chopped
  • 1 carrot finely chopped
  • 3 cloves of garlic, chopped
  • a bunch of fresh thyme
  • 4 sprigs fresh rosemary
  • 4 sprigs fresh mint
  • 1 bay leaf
  • 2 heaped dsp redcurrant jelly
  • 2 tbsp red wine vinegar
  • 150ml red wine
  • 1 pint of stock
  • salt and black pepper


  1. Fry the meat offcuts in the olive oil and butter for 2 minutes, then add the onion, celery, carrot, garlic, herbs and fry until the vegetables are softened and the meat well browned. Add the redcurrant jelly and red wine vinegar and boil for 1 minute to reduce the volume of liquid. Add the red wine and stock and boil for 5 minutes to produce a rich gravy, add salt and pepper to taste and then strain into a jug and serve.
