Quick and Simple Carnation Cheesecake

Ingredients:

  • 200g digestive biscuits crushed
  • 100g melted butter
  • tin of condensed milk
  • 300g cream cheese
  • juice and zest of 2 lemons
  • 2 dsp lemon curd

Directions:

  1. Mix the melted butter and crushed biscuits and press into a 20cm loose bottomed tin, smoothing out the surface. Whisk the tin of condensed milk with the cream cheese until smooth and then stir in the lemon juice and zest. Pour on top of the biscuit base. Heat the lemon curd gently in a pan until it is runny and pour swirls of it across the cheesecake mixture and chill for 2 hours.
