An excellent store cupboard meal that is healthy and vegetarian
Quick and Easy Bean Chilli
Ingredients:
- 2 onions chopped
- 1 pepper chopped
- 2 courgettes sliced or 2 handfuls of brocolli florets or similar
- 1 splash of olive oil
- 1 tin of baked beans
- 1 tin of 3 bean salad
- 1 tin of kidney beans
- 1 tin of chopped tomatoes or tomato soup
- 1 heaped tsp chilli flakes
- 3 bay leaves
- 2 stock cubes
Directions:

Fry the onion, vegetables, eg courgettes, and pepper gently in the olive oil for 3-4 minutes, add all of the beans and tomato, bay leaves, chilli flakes and stock cubes and gently simmer for about 20 minutes stirring often. Serve sprinkled with a little cheese and crusty bread if desired.
