An excellent store cupboard meal that is healthy and vegetarian

Quick and Easy Bean Chilli

Ingredients:

  • 2 onions chopped
  • 1 pepper chopped
  • 2 courgettes sliced or 2 handfuls of brocolli florets or similar
  • 1 splash of olive oil
  • 1 tin of baked beans
  • 1 tin of 3 bean salad
  • 1 tin of kidney beans
  • 1 tin of chopped tomatoes or tomato soup
  • 1 heaped tsp chilli flakes
  • 3 bay leaves
  • 2 stock cubes

Directions:

  1. Fry the onion, vegetables, eg courgettes, and pepper gently in the olive oil for 3-4 minutes, add all of the beans and tomato, bay leaves, chilli flakes and stock cubes and gently simmer for about 20 minutes stirring often. Serve sprinkled with a little cheese and crusty bread if desired.
