Pastryless Quiche

I have always preferred the filling rather than the pastry so this is a great recipe.

Pastryless Quiche

  • 600g new potatoes
  • 1 tsp olive oil
  • 1 onion finely sliced
  • 200g smokey bacon chopped
  • 4 large eggs, beaten
  • 300ml milk
  • 170ml double cream
  • 100g grated cheddar


  1. Heat the oven to 180C. Boil the potatoes until just tender and slice thinly into a large shallow oven proof dish. Heat the oil in a pan and fry the onions and bacon until the onion is soft and place in a layer over the potatoes. Mix the eggs milk and cream together and season and pour over the onions and potatoes in the dish. Sprinkle the chees on top and cook for 25 to 30 minutes until set and browning. Serve with a salad.
