Marrow Chutney

A great chutney for using up a glut of marrows. It keeps well and gets better on keeping.

Marrow Chutney

Ingredients:

  • 1.5 lb marrow cubed
  • 1/4oz salt
  • 1/2 lb onions
  • 1.5 lb apples
  • 1/4oz mustard seed
  • 3/4lb brown sugar
  • 1/2 oz ginger
  • 1.75 pts malt vinegar
  • 1/4oz peppercorns

Directions:

  1. Mix the cubed marrow with the salt and leave overnight. Rinse the marrow and place in a large pan with all of the other ingredients and bring to the boil. Simmer until all of the onion etc is soft and the mixture has thickened.

  2. Prepare some jars by cleaning and placing in hot water in the sink for about 5 minutes. Then spoon the chutney into the jars. Wipe around the tops of the jars and place cellophane over the top of the jars and screw on the lids, label and store.
