I had previously used this marinade for chicken skewers on a barbecue but this weekend used it on mushroom, courgette, pepper and halloumi kebabs and it was delicious.
Marinated Vegetable or Chicken Skewers
Ingredients:
- bunch of coriander
- bunch of mint
- 6 cloves garlic
- 1 red chilli
- zest & juice of 1 lemon
- black pepper
- 2 tbsp olive oil
Directions:

Blitz all of the ingredients in a food processor and then put your chopped vegetables and cheese in (eg courgette, whole mushrooms, chunks of pepper, diced aubergine and cubed halloumi). Leave to marinade over night, then thread onto wooden skewers that have been soaked in water. Barbecue for about 15-20 minutes depending on the heat of your barbecue.
