Low Calorie Cheesecake Pots

I am trying to lose a bit of weight and so got to thinking how I can make low calorie versions of my favourite things, well here is my version of raspberry cheesecake.

Low Calorie Cheesecake Pots

Ingredients:

  • 1 sachet (1 pint) no sugar raspberry jelly powder
  • 250g quark
  • 2 custard cream biscuits
  • Calories per portion: 76

Directions:

  1. Measure out 1/2 pint of boiling water pour in the jelly powder and mix until it’s all dissolved (don’t add the other half pint of water as instructed on the jelly packet). Put the jug of jelly into the fridge to cool for 15 minutes. Put the quark in a bowl and mix roughly to break up. Take the 2 custard cream bisciuts and break them up by placing in a plastic bag and hitting with a rolling pin. Spoon the biscuit crumbs between 4 ramekins.

  2. When the jelly has cooled but not set, slowly pour 5 fuid ounces of the jelly into the quark, mixing all the time to combine them. When smooth share the cheese and jelly mix between the ramekins, place them in the fridge and leave for about an hour to set.
