This is lovely with anything, and makes a great sandwich with rocket and a shake of black pepper. You can make it using butter beans too.
- 1 tin of chickpeas – but keep the liquid!
- 2 tbsp olive oil (or for a lower fat version use the same amount of liquid saved from the tin of chickpeas)
- 3 tbsp tahini
- 1 tbsp lemon juice
- 2 tsp minced garlic
- 1/2 tsp salt
- 1/2 tsp pepper
- Whizz all the ingredients together in a food processor.
- If the mix is too thick add some of the water from the tin of chickpeas to loosen it up.
