I haven’t tried this yet so don’t know how much it makes. I am thinking of making some to use in the cheesecake recipe.
Home Made Ricotta
1 lt full fat milk
250ml natural yoghurt
1 tsp salt
1 tbsp lemon juice
Bring the milk to a simmer., add the yoghurt, salt and lemon juice and mix well. The mixture should curdle, if not then add more lemon juice. Transfer the curds into a muslin lined sieve cover and leave to drip for an hour, then store in the fridge.

I am writing this blog so that all of the recipes in my head and on scraps of paper can be recorded for my children and grandchildren. As I am trying to get the recipes up as quickly as possible there may be errors in for example the time of cooking as I have never really written this down, however I have tried to put realistic times and if anything the times given will be a bit less than required. Over time I will modify each description as I cook that particular item.
