I haven’t tried this yet so don’t know how much it makes. I am thinking of making some to use in the cheesecake recipe.

Home Made Ricotta

  • 1 lt full fat milk
  • 250ml natural yoghurt
  • 1 tsp salt
  • 1 tbsp lemon juice


  1. Bring the milk to a simmer., add the yoghurt, salt and lemon juice and mix well. The mixture should curdle, if not then add more lemon juice. Transfer the curds into a muslin lined sieve cover and leave to drip for an hour, then store in the fridge.
