A recipe given to me some years ago which makes a very short pastry, lovely for mince pies or any other pie. It doesn’t have sugar in so ideal for sweet or savoury dishes but if you want a sweet pastry just add 2oz sugar to the flour.
Gladys’s Pastry
Ingredients:
- 8oz plain flour
- 3oz cookeen
- 3oz margarine
- 1 egg yolk
- cold water by the drip
Directions:

Mix the flour, cookeen and marge together in your food mixer for a minute or so until it resembles breadcrumbs. Mix in the egg yolk and then just a few drops of water until the dough has come together. Refrigerate the pastry for at least 30 minutes before using.

Bake for 20 minutes at gas mark 6 for small tarts or mince pies.
