Fondant Potatoes

I was inspired to try this after watching Masterchef. They are no good if you are on a diet but they taste fabulous. I think it is definately worth experimenting with different types of potatoe for the perfect flavour combination.

Fondant Potatoes

Ingredients:

  • 8 to 12 medium sized potatoes
  • 3 tbsp olive oil
  • 100g butter
  • fresh thyme, sage and garlic, finely chopped
  • 1 pint of chicken stock

Directions:

  1. Heat the oven to 190C. Peel the potatoes and then cut into 5cm rounds. Heat the oil and butter in an ovenproof pan and cook the potatoes on one side until browned. Turn the potatoes over, add the herbs and garlic and the stock, cover the pan with foil and cook in the oven for 40 to 45 minutes until soft.
