Enchilada Tomato Sauce
Ingredients:
- 500g passata
- 390g chopped tomato
- 1/2 tsp paprika
- 1/2 tsp sugar
- 1/2 tsp salt
- 1/2 tsp ground cumin
- 1/2 tsp chilli powder
- 1/2 tsp cayenne pepper
- 1/2 tsp garlic powder
- 1/4 tsp ground black pepper
- 1/2 tsp dried oregano
- grated rind of half a lemon
Directions:

Put all the ingredients into a pan and gently boil until the volume has reduced by a third. Your sauce is now ready to use for echiladas.
