Enchilada Tomato Sauce

Ingredients:

  • 500g passata
  • 390g chopped tomato
  • 1/2 tsp paprika
  • 1/2 tsp sugar
  • 1/2 tsp salt
  • 1/2 tsp ground cumin
  • 1/2 tsp chilli powder
  • 1/2 tsp cayenne pepper
  • 1/2 tsp garlic powder
  • 1/4 tsp ground black pepper
  • 1/2 tsp dried oregano
  • grated rind of half a lemon

Directions:

  1. Put all the ingredients into a pan and gently boil until the volume has reduced by a third. Your sauce is now ready to use for echiladas.
