This is perfect with sweet and sour chicken, or satay chicken. The sesame oil is not used to cook anything, it is a seasoning and gives a wonderfully authentic chinese taste to the rice.

Ingredients:

  • 450g cooked and cooled rice
  • 3 tbsp oil
  • 2 eggs, beaten
  • 1 tbsp soy sauce
  • 60g peas
  • sesame oil
  • 2 thinly sliced spring onions
  • salt and pepper

Directions:

  1. heat the wok or frying pan and add the oil, pour in the egg and soy sauce and cook until just starting to set
  2. add the rice and peas and stir, and cook for 3 minutes, stirring all the while
  3. add a dash of sesame oil, test the seasoning and add salt and pepper if required, stir and serve
