  • 9oz butter
  • 9oz muscovado sugar
  • 2.5lb mixed dried fruit
  • 3oz cherries
  • rind and juice of 1 orange
  • 12oz SR flour
  • 1 tsp mixed spice
  • 6oz almonds
  • 4 eggs beaten


  1. Heat the oven to 150C. You need a greased and lined 9 inch round tin.

  2. Put the butter, sugar, fruit, cherries, orange juice and rind in a pan and heat gently until sugar dissolved. Then bring to the boil. Leave to cool. Then sift in the flour and spice, add the eggs and nuts, mix and then place the mixture in a greased and lined tin and cook for 3 hrs.
