These are chewy and delicious. You do need to refridgerate the mixture before cutting as it can be quite sticky to handle.

Ingredients:

  • 10oz light brown sugar
  • 8oz granulated sugar
  • 9oz butter
  • 2 eggs beaten
  • 1 tbsp vanilla extract
  • 1lb plain flour
  • 2 tsp baking powder
  • 1oz of choc chips or chocolate chopped up

Directions:

  1. Whisk the butter and sugars together until creamy, beat in the eggs gradually and the vanilla extract. Stir in the flour and baking powder and mix well. Mix in the chocolate chips. Divide the mixture into 2 and place on clingfilm. Roll each into a sausage shape about 2 inches diameter, wrap in the clingfilm and put in the fridge for at least 2 hours before baking. (You can feeze the mixture at this stage, well wrapped).

  2. Heat the oven to 180C and slice each roll of dough into half inch slices and place well spaced out on a tray covered in baking parchment. Bake for 20 minutes until the biscuits are brown on the edges but pale in the middle. The baked biscuits freeze well also.
