Chicken & Chorizo Jambalaya

Ingredients:

  • 1 tbsp olive oil
  • 2 chicken breasts sliced
  • 1 diced onion
  • 1 thinly sliced red pepper
  • 4 crushed garlic cloves
  • 100g chorizo sliced
  • 1 tbsp cajun seasoning
  • 1 tsp smoked paprika
  • 250g rice
  • 1 can chopped tomatoes
  • 350ml chicken stock

Directions:

  1. Brown the chicken in the oil for 5 minutes, remove from the pan. Add the onion, garlic, pepper, spices and chorizo to the pan, cook for 5 minutes, Add the stock, chicken, tomatoes and rice and simmer for 25 minutes until the rice is cooked.
