Nearly free as you can pick the fruit yourself from the hedgerows, and great as a jam or to accompany meat.

Bramble Jelly

Ingredients:

  • 1 kg cooking apples roughly cut up, no need to peel etc
  • 1 kg blackberries
  • 2 sliced lemons
  • 1.2 lt water
  • about 1 kg jam sugar

Directions:

  1. Put the apples, blackberries, lemon and water in a large pan and simmer for 40 minutes until all the fruit is soft.

  2. Strain this through a jelly bag and let all the liquid drip through which will take a couple of hours. Remember you are wanting the liquid that drips through, that is what you will make the jelly from. Measure the juice and for every 600ml of liquid you will need 500g of sugar. Place all of this ie the juice and sugar into a large pan and heat gently until all of the sugar has dissolved, then increase the heat and boil hard for 4 minutes, then turn the heat off move the pan away from the heat and bottle the jelly in clean sterilised jam jars. It should make about 4lb of jam.
