Very calorific but a great pud to do if you have guests as it’s quick and easy to make.

Banoffee Pie

Ingredients:

  • 10oz butter
  • 9oz crushed digestive biscuits
  • 6oz sugar
  • 1 tin of condensed milk
  • 2 bananas, sliced
  • 1/4 pint sour cream
  • grated dark chocolate to decorate

Directions:

  1. Melt 4oz of the butter and stir in the crushed digestive biscuits. Press this mixture into a 7 or 8 inch cake tin and chill.

  2. Place the remaining butter and sugar in a pan over a low heat and stir until the butter melts. Add the condensed milk and gently bring to the boil stirring continuously being careful that the mixture does not burn, boil for 5 minutes stirring throughout. Mix in the sliced banana, spread the mixture over the base and chill.

  3. To serve decorate with the cream and some grated chocolate.

  4. NB this recipe dates from before you could buy tins of caramel. If you do not want to risk burning the caramel why not just use a tin of caramel, mix in the chopped banana and spread it on the biscuit base.
