Banana and Onion Seed Chutney

Ingredients:

  • 1/4 pt balsamic vinegar
  • 6 ripe bananas
  • 1/2 pt malt vinegar
  • 500ml apple sauce
  • the flesh from 14 tamarind pods
  • 1 tsp cumin seeds
  • 4 tsp black onion seeds
  • 1 tsp nigella seeds
  • 1 tsp ground coriander
  • 1 tsp ginger paste
  • 1 tsp chopped red chillies
  • juice of 2 limes
  • 1 tsp lo-salt
  • 1/2 lb preserving sugar
  • 3 cups of sliced red onion

Directions:

  1. Put all the ingredients except the onion seeds and nigella seeds into a large preserving pan.
  2. Using a stick whisk break the ingredients up and roughly mix them, then heat gently until all of the sugar is dissolved.
  3. Simmer for 20 minutes.
  4. Add the onion seeds and nigella seeds and simmer for 30-40 minutes until the chutney is thick enough.
  5. Bottle in warm sterilised jars.
