I made this last week and simply sandwiched it together with some homemade strawberry jam, no buttercream or cream and it was simply delicious! And of course not quite as fattening as an iced cake.
Victoria Sandwich Cake
- 4 large eggs, beaten
- 8oz sugar
- 8oz self-raising flour
- 2tsp baking powder
- 8oz softened butter
- juice from half an orange
- Put all the ingredients in a bowl, whisk for 2-3 minutes. If the mixture is a little stiff add a little more orange juice until it is a dropping consistency.
- Place in 2 8 inch tins which have been greased and floured and then bake at 180C for 20-25 minutes until cooked, ie it bounces back when gently touched in the centre.
- Sandwich together with about half a jar of strawberry jam once the cakes are cool.
